Waffles
Ultra Light and Fluffy Waffles

2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
2 Tablespoons sugar
3 eggs separated
1 3/4 cups milk
1/2 cup vegetable oil

Sift flour with baking power, and salt 3 times.  Place in large mixing
bowl.

Beat egg yolks until frothy; mix in sugar and mix till mixture turns
lighter colored and holds a light foam.  Add milk and oil and
continue mixing till foam forms on top. While beating sift in flour
mixture; beating with rotary beater until smooth.

Beat egg whites until stiff peaks form; gently fold into batter.

Pour enough batter for each waffle into hot waffle iron;  bake until
golden.  Serve immediately.
